  • 1 lb medium shrimp deveined
  • 1/2 cup freshly squeezed lime juice
  • 1 cup diced ripe mango
  • 1/2 cup chopped red onion
  • 2 tsp minced jalapeño
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Rinse the shrimp under cold water and pat them dry completely using paper towels to remove excess moisture.
  2. Cut the shrimp into small, even pieces so they marinate evenly and absorb the lime juice properly.
  3. Place the shrimp in a bowl and pour the lime juice over them, making sure all pieces are well coated.
  4. Cover the bowl and refrigerate until the shrimp turn opaque and pink, indicating they are fully “cooked” by the citrus.
  5. Remove the bowl from the refrigerator and add the diced mango, chopped onion, jalapeño, bell pepper, and cilantro.
  6. Season with salt and black pepper, then toss everything gently until well combined and evenly mixed.
  7. If the mixture tastes too tangy, remove a small amount of the lime juice to balance the flavor.
  8. Cover again and refrigerate for additional time to allow all the flavors to meld together.
  9. Taste before serving and adjust seasoning if needed, then serve chilled for the best flavor.
