Bread
  • 1/3 cup brown sugar

  • 2/3 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup milk

  • 2 cups apples peeled, cored, and chopped
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
Glaze
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Method
 

  1. Preheat your oven to 350°F. Grease an 8.5×4.5×2.5-inch loaf pan with non-stick spray so the bread does not stick.
  2. In a small bowl, mix together the brown sugar and 1 teaspoon cinnamon. Set this aside for later.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs and vanilla extract, mixing just until combined.
  4. In another bowl, whisk together the flour and baking powder. Add this dry mixture to the wet ingredients and stir until combined. Pour in the milk and mix until the batter is smooth.
  5. Pour half of the batter into the prepared loaf pan and spread it evenly.
  6. In a small bowl, mix the chopped apples with cinnamon and sugar. Spoon half of the apple mixture over the batter. Add the remaining batter on top and spread it gently. Finish with the rest of the apples, pressing them down slightly into the batter.
  7. Sprinkle the brown sugar and cinnamon mixture evenly over the top.
  8. Bake for about 1 hour, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for about 30 minutes.
  9. In a small bowl, stir together the powdered sugar and milk until smooth. Drizzle the glaze over the cooled bread.
  10. Slice and serve.
